Adding Pizzazz to Ordinary Pork

In a previous blog I hinted that the price of food has affected my menu planning and some of you noted that you are in the same boat. One reader commented that pork is a lot cheaper than chicken in his neck of the woods. I was surprised by the comment and today I did some comparison shopping at my local market. Chicken is cheaper, but I only buy whole birds or breast meat in bulk. However, the price of pork (at least the cuts I looked at) was not exorbitantly high. While I wouldn’t consider buying more pork based … Continue reading

Twice Delicious: Tex Mex Pork Wraps

I don’t know about you, but whenever I cook in my crock pot I have leftovers. I do it on purpose actually. It is nearly impossible to cook with a “helpful” three year old and 20 month old twins underfoot. So the day after crock pot night is leftover night. I actually have two portions of leftovers (generally) and so I’ll usually freeze meat for another meal later. In any case, I thought you all might like to know what I did with my leftover Sweet Barbecue Pork Chops that we made in the slow cooker. First of all. . … Continue reading

Chinese Steamed Buns with Roast Pork (Cha Shao Pao)

For this recipe, you will need all purpose flour, sugar, yeast, shortening, peanut oil, 1/2 pound of cha shao (Chinese roasted pork), leeks, sliced ginger root, salt, both light and dark soy sauce, oyster sauce, chicken stock, sesame oil, red food coloring, and cornstarch. Dice the cha shao before starting the recipe. To make the dumplings, sift 6 cups of all purpose flour into a large bowl. Dissolve 1/2 cup of sugar in a little hot water. Add 1 tablespoon of yeast and stir. Let this stand for 10 minutes. Melt two tablespoons of shortening in a microwave safe bowl. … Continue reading

Cuban Midnight (Medianoche) Sandwich with Fried Plantains

The Cuban Midnight (Medianoche) Sandwich is a favorite in Cuba. For traditional sandwiches, the pork is slow roasted in Cuban spices, giving it a garlic/citrus smell. Unlike most American sandwiches, Cubans do not normally eat tomatoes or lettuce on their sandwiches and many do not include mayonnaise, although this recipe does. The sweet rolls of the Medianoche makes it a favorite nighttime snack, hence the name. For this recipe, you will need four sweet bread rolls, mayonnaise, prepared mustard, one pound of thinly sliced cooked ham, one pound of thinly sliced fully cooked pork, one pound of sliced Swiss cheese, … Continue reading

North Carolina-Style Pulled Pork

I will be the first to admit that I am a bit of a barbecue snob. When you are raised in Memphis, home of the world’s best barbecue, it is hard to move other places and enjoy their barbecue. Different areas of the country have very different ideas on what exactly to barbecue (pork or beef) and how to barbecue it. I’ve been disappointed with barbecue I’ve had everywhere outside of Memphis with the exception of North Carolina. It is pork (which is important to me – Memphis barbecue is always pork). For this recipe, you will need a pork … Continue reading

Lumpia – A Treat from the Philippines

Lumpia is a very popular Filipino spring roll. There are many different recipes for it – some recipes call for ground pork, ground beef, chicken, or a combination of the meats. If you wish, you can make vegetarian lumpia. The first time I had lumpia was at a little food shack outside the doors of the Exchange at Miramar Marine Corps Air Station. The place was just a little hut that only served lumpia, pancit, and chicken on a stick, but it was so delicious! For this recipe, you will need one pound of ground beef, 1/2 pound of ground … Continue reading

Barbecued Spareribs

We are planning to grill out tomorrow for the holiday weekend. Hubby wants hamburgers and hotdogs (which I adore), but I am in the mood for some good, sticky, finger licking barbecued ribs. If you want a good recipe for barbecued ribs, check this one out. You will need about six pounds of pork ribs (spareribs), one medium onion, dried rosemary, dried leaf thyme, dried marjoram, dried oregano, dry red wine, ketchup, soy sauce, ground ginger, honey, cloves, and minced garlic. Cut the ribs into serving size portions. Place them in a large pot filled with water and cook over … Continue reading

Chinese-style Barbecue Pork

Chinese-style Barbecue Pork This oven-barbecued pork is a delicately seasoned pork that isn’t dripping with sauce, which you might associate with barbecue pork. It’s seasoned with Chinese Five Spice, a mixture of cinnamon, anise, fennel, ginger, cloves, white pepper and licorice (that’s actually seven…go figure!) It is delicious on its own, served with steamed sticky rice and vegetables, but I most often use it in other recipes, such as when I make homemade pork buns or chow mein. I like to make a big batch and then freeze it in thirds to use in Chinese dishes. I’m sure you’ll find … Continue reading
