Comfort Foods: Meat and Potatoes

Continuing with our “Comfort Foods” theme, today I am focusing on the classic combination of meat and potatoes. There are some people who don’t go a single day without ingesting at least one meal that features a hearty helping of meat and potatoes. For these individuals the combo screams comfort. While I make a concerted effort not to serve meat and potatoes for dinner every night, I do admit that the combo brings back fond memories of my childhood. The following recipes were some of my favorites: CLASSIC MEATLOAF Ingredients: 2 pounds ground chuck 1 envelope dry onion soup mix … Continue reading

Meaty Monday

It’s a meaty Monday here thanks to my favorite grocery store selling chuck roast at an unbelievably low price. Whereas I usually stock up on white meat, I couldn’t resist the sale, and now I am the proud owner of a 5-pound chuck roast. In addition to the red meat that is sitting in my refrigerator I also have leftover roast pork that needs to be eaten before Ash Wednesday. Fortunately, I have devised two simple and delicious ways to prepare (and subsequently devour) said meat products. Take a look: PERFECT POT ROAST Ingredients: 1 3 to 5 lb. Chuck … Continue reading

Hearty Homemade Winter Soup Recipes

We received more than 40 inches of snow in the month December. That’s more than our city typically sees during the entire winter season and meteorologists say more of the white stuff is on the way along with record breaking cold temperatures. Next week Milwaukee is not supposed to get above ZERO. In fact, on Wednesday the forecasted high is predicted to be -6. City officials are already warning people not to travel if they don’t have to. What a joke. Who willingly chooses to expose themselves to dangerously cold weather conditions? If I had my way I would stay … Continue reading

Autumn Recipes: R is for Roasts

It’s hard to go an entire autumn season without making at least one roast. Whether it’s a melt-in-your-mouth pot roast or a succulent pork roast, the simple dish (that yields a ton of welcome leftovers) not only warms up your home on a crisp fall night, but it’s also one of the most versatile dishes out there. The first two recipes I’ve included pair hearty pork roasts with seasonal apples. Both recipes are extremely simple to prepare (one cooks in a crock pot, which makes it even easier). The third recipe is for a Classic Pot Roast, which is also … Continue reading

Autumn Recipes: C is for Comfort Food

Fall’s cooler weather makes piping hot, down home comfort food taste that much better. When I think of comfort food thoughts of my grandfather’s famous pot roast and my dad’s incredible meatloaf and my grandmother’s warm potato salad (featuring chunks of fall apples and thick smoky bacon) come to mind. Both take prep time that you might not have on a busy weeknight, but on a late Sunday afternoon when a stiff wind is blowing leaves across your yard a hot homemade meal is the perfect way to embrace the season. OLD FASHION MEATLOAF Ingredients: 1 cup of finely chopped … Continue reading

Twice Delicious: Pot Roast Cheese Steaks

Twice Delicious is a series of recipes dedicated to what I do with my leftovers. I rarely have leftovers except from my crock pot. But I have found that I can’t possibly consider simply reheating the leftovers and serving them to my family as is. That would be akin to offering nothing but bread and water. In fact, I have a child who would opt for bread and water rather than leftovers! Not only would it mean they’d have to eat the same thing twice in a row (apparently that’s forbidden–I wish someone had told me earlier in motherhood!); but … Continue reading

Yankee Pot Roast in 15 Minutes

I like time savers and money savers, but I like to feed my family wholesome, home cooked meals. This one covers all the bases. I especially like this because I can prepare it in the morning, forget about it, and have it ready for dinner. Pot roast is great because you can usually get a nice beef roast for about $5 and easily feed five hungry adults and then some! Here is what you’ll need: Beef Roast 3 Tablespoons Butter 6 Cups Water 5 Large Potatoes 2 Cups Frozen Baby Carrots 1 Medium Onion or dry Minced Onion Crushed Garlic … Continue reading
