One of the goals of parenting is to raise a child who becomes a self-sufficient adult. What that looks like may vary depending on individual parent’s personal views. Baguette Chips instead of Potato Chips

I love to snack. When I am working or watching a movie I immediately want to munch on something. I never buy chips because I could sit and eat the whole bag. Since I don’t care for the that much it is a waste of fat and calories. I could eat a pint of ice cream or sorbet if I allowed myself. I am quite certain I do not have to tell you the danger in that. So, I look for healthy snacks. But chewing up carrots, as good as they are for you, are not always what I am … Continue reading

Yummy Mashed Potatoes

This is by far the best traditional mashed potatoes recipe that I have cooked so far. The mashed potatoes are creamy with lots of butter, as they are supposed to be. Use a little less milk (reduce about half a cup) for firmer potatoes. I find that the extra half cup makes the potatoes leave over well (even when freezing), preventing them from dying out. Ingredients 5 Pounds of Potatoes–Yukon Gold or other gold potato works best, but by all means use russet potatoes if that is what you have on hand. 2-1/2 Teaspoons of Salt 2-1/2 cups of Evaporated … Continue reading

Cheap Dinner Ideas: Potato Bar

Sometimes it is hard to balance quick and easy with cheap when it comes to meals. The kids are really starting to get into their activities, and with all of the driving around (although I know we are probably better than most in that regard), there is little time for doing a lot of cooking from scratch. But home made meals don’t need to be elaborate to be healthy, warm, filling and delicious. Potato Coffee

Every morning for a number of years I’ve (in general) had a cup of coffee. This doesn’t take away from the wild fables of my tea-drinking persona (for I love tea, as a quick perusal of previous blog posts will prove), but it does add to the depth of the flavors I tend to partake in daily. Coffee is good. It tastes good and it is good. Could it be better? I used to wonder that. I switched, initially, from major brands to small, organic, fair-trade outfits. The taste improved considerably. Eventually I switched brewing methods. I moved from the … Continue reading

Red Skin Potato Packets with Garlic Butter

It is just too hot to cook! Add this recipe to your summer menu for a great grilled side dish that offers full flavor with minimum preparation or clean up! Do you remember those red skin potatoes that we got in our last CSA box? Well, originally I had planned on turning some of them into potato salad and some into oven roasted potatoes. With the heat, though, I opted instead to do these little red skin potato packets. Okay, laziness had something to do with it, too! My husband was grilling chicken anyway… This recipe generously feeds six with … Continue reading

Low-Calorie Potato Chips Contribute to Weight Gain

I’m not a big potato chip eater but for those who are, you might think that going the low-calorie way is better. After all, you get to enjoy the salty crunch of a chip yet you aren’t taking in as many calories. Well according to a new study published by the American Psychological Association (I am still trying to figure that one out…what do they have to do with this?), low-calorie chips could actually be contributing to weight gain. That’s because these low-calorie chips contain fat substitutes. It is believed that these can confuse the body’s regulation of food intake, … Continue reading
