Texas Wing Chowder
1 onion, chopped
2 celery ribs, chopped
1/4 cup butter
1/4 cup flour
3/4 cup milk
3/4 cup chicken broth
2 cups chicken, cooked, and diced
1/2 cup Texas chicken wing sauce
4 ounces processed cheese, cubed
1/2 teaspoon dried parsley flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon celery salt
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/2 teaspoon salt
Blue cheese, crumbled
Heat butter in a saucepan, sauté onion and celery. Whisk in flour, cooking 2 minutes taking care not to brown. Slowly whish in milk and chicken broth until smooth and then add remaining ingredients. Simmer on low heat until cheese melts. Add to serving bowls and sprinkle on blue cheese.
