July is more than half way over and for most moms the dog days of summer were supposed to bring with them a break from the chaos that comes from chauffeuring kids from school to soccer, piano lessons, karate, and dance. But if your life is anything like mine then you have likely found that summer’s hot and humid days just mean you have shifted your schedule to accommodate swimming, t-ball, golf and playdates.
But relief is on the way. If your days of dining on the run are far from over then you might find the following recipes quite helpful. These wraps are not only convenient to munch on between swimming and piano lessons, but they are also filled with kid friendly ingredients so you don’t have to deal with whines and complaints coming at you from the backseat.
Wraps are also handy for an afternoon picnic in the park or if are searching for a tasty alternative to traditional sandwiches for your next beach outing. Regardless of your summer destination, I guarantee the following recipes will come in handy.
SPINACH BLT WRAP
Ingredients:
1 spinach flavored tortilla
2 to 4 tablespoons ranch dressing
1 1/2 cups spring mix lettuce
Sliced turkey
2 slices crisply cooked bacon
1 slice American or cheddar Cheese
1 sliced tomato
1/2 avocado, sliced
1 tablespoon sliced black olives
1 tablespoon crumbled bleu cheese
Directions:
Spread tortilla with salad dressing. Top with remaining ingredients. Wrap like a burrito.
ORIENTAL STIR-FRY WRAP
Ingredients:
2 tablespoons vegetable oil
3 cups fresh stir fry vegetables (found bagged in produce section of supermarket)
1 cup sliced mushrooms
2-3 tablespoons soy sauce
1/2 teaspoon red pepper flakes
1 pound precooked steak, sliced thin
1 teaspoon sesame oil
2 teaspoons toasted sesame seeds
Fresh chopped cilantro
2 to 4 soft flour tortillas
Directions:
In a large sauté pan or wok, heat oil over high heat.
Stir-fry vegetables for a few minutes until tender yet crisp.
Add soy sauce, red pepper flakes, steak and sesame oil. Cook for two more minutes.
Spread out tortillas and top with stir-fry mixture, sesame seeds and cilantro.
Wrap like a burrito and eat.
