One of the joys of cooking is how easy it is to alter a recipe once you have the basics. It’s so easy to add individual touches and change it just a little, so that it doesn’t always taste the same. On the weekend my daughter and I were chatting as we made Thai Chicken Rolls. Those for me were made with gluten free frozen puff pastry. Those for everyone else were made with normal frozen puff pastry.
It’s funny watching her cook. She’s much the same sort of cook I am. I rarely measure but estimate what looks right. She does too. I’ve always got to stop and be more careful when I’m doing a recipe for this blog. I noticed other similarities in our cooking. Since we both lead busy lives, we’re big fans of meals that don’t take a lot of time preparation time. We’re also both big fans of sweet chili sauce.
As we were making the Thai chicken rolls, we were talking about how it would be so easy to change the taste and keep the cost down by using sausage mince instead of chicken mince.
‘Then you could serve it with tomato sauce’ her husband who was making the salad said.
‘No,’ we both said; ‘what’s wrong with sweet chili sauce? Sweet chili sauce goes with everything.’
It took only a few minutes to make the rolls and pop them on the baking trays. My daughter uses baking paper on her trays, whereas I’m inclined to spray with canola spray.
Just one point , if you re cooking some Thai chicken rolls that are gluten free and some not, be careful to ensure you can tell them apart. We pricked ours in different ways. The gluten free ones had crosses pricked in them but once they were cooked, it wasn’t that easy to pick up. There is a difference though in the pastry. The gluten free sheets are thicker, so we still could see which was which. But to be on the safe side I’d put them in different size trays.
Served with salad, the Thai chicken rolls made a beautiful lunch, which we ate outside amongst the trees.
If you ever manage to have any left over of these they would freeze well. They’re also a good thing to take to a party or a potluck dinner because people love them.
