It’s been 13 long years since the Green Bay Packers played in a Super Bowl and now that the drought is over, residents in Wisconsin are ready to party like college co-eds on graduation day. I’m sure it’s the same way in Pittsburgh, but since I live in Packer Nation I can only speak of the craziness that has engulfed my neck of the woods.
People have been planning Super Bowl parties since the minute the Green and Gold won the NFC Championship game in Chicago against the Bears. Stores are decked out in Packer colors and are offering everything from tailgate cooking kits to foam cheeseheads for infants.
With less than a week to go until the big game I have been going through my recipe box looking for simple game day dishes that will spice up Super Bowl Sunday viewing parties. Here are my top two picks:
SPICY PORK SANDWICH
Ingredients:
6 ounces of pork tenderloin, pounded thin
Soy sauce
Cole Slaw
Spicy Mayo
Pita bread
Directions:
Dredge pork in soy sauce and grill.
While pork is cooking toss store bought Cole Slaw or make your own by mixing julienne red and green cabbage, red and yellow peppers, carrots and red onion with mayonnaise, lemon juice, salt and pepper.
To make spicy mayo, combine roasted Jalapeno peppers, mayonnaise and salt and pepper to taste.
Place grilled pork on pita bread and top with Cole Slaw and spicy mayo.
JACKED UP CHEESEBURGERS
Ingredients:
1 cup mayonnaise
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
Juice from half a lime
2 pounds ground beef
2 teaspoons steak seasoning salt
4 slices Pepper Jack cheese
1/2 cup pickled jalapeno peppers
8 slices cooked bacon
4 pieces leaf lettuce
4 slices tomato
4 toasted buns
Directions:
Combine mayo, chipotle chilies, adobo sauce and lime juice in a food processor until smooth.
Refrigerate until ready to use.
Mix beef and steak seasoning. Form into four patties.
Grill burgers to desired doneness.
Top each burger with a slice of cheese and allow to melt.
Before serving, spread chipotle mayo on buns and top burgers with pickled jalapeno peppers, bacon, lettuce and tomato.
