Summer is hot. I know it, you know it. The idea of cooking, let alone preheating or running an oven that seems to heat up the kitchen faster than the food, is not attractive at all.
That’s why freezer cooking is so awesome. Yes, it might require the use of the oven for the initial preparation (though not all recipes need the oven).
However, if you make a lot of meals in one day, you have a freezer full to pull and prepare without heating up your kitchen in drastic ways!
Try the following recipes for delicious summer foods!!
BBQ Chicken Pasta
- 6 cups boneless chicken breast without skins
- 2 cups onion, chopped
- 4 tablespoons vinegar
- 4 tablespoons brown sugar
- ½ cup lemon juice
- 6 tablespoons Worcestershire sauce
- 2 cups ketchup
- 1 tablespoon mustard
- 2 cups water
- 1 cup celery, chopped
- cooked pasta
Combine all of the ingredients. Pour into a gallon freezer bag and freeze. When you are ready to serve, thaw and bake uncovered at 350 degrees for 45 minutes. Serve over pasta.
Garlic Herb Burgers
- 2 lbs lean ground beef
- 1 envelope savory herb with garlic soup mix
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup green onions, chopped
Place the ground beef in a large mixing bowl, add 1 Tbs of the soup mix and mix it in well. Shape the hamburger into 12 1/2″ thick patties In a medium mixing bowl, beat together the cream cheese, remaining soup mix and the green onions Place 1 Tbs of the cream cheese filling on a patty, and then cover with another patty, sealing the edges together.
Refrigerate the hamburgers for at least 1 hour before cooking. To Freeze: Flash Freeze uncooked on a cookie sheet until solid then put into a ziplock bag or vacuum seal quantity desired. To Cook: Thaw in refrigerator and grill as usual.
Simply The Best Burgers
- 2 pounds ground beef
- 1 onion, chopped
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried basil
- 1/4 cup Italian seasoned bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1/3 cup Teriyaki sauce
- 6 slices American cheese
- 6 onion rolls
Preheat oven to broil. In a large bowl, combine the ground beef, onion, salt, ground black pepper and basil; mix together well. Then add the bread crumbs, cheese and teriyaki sauce. Mix this together well and divide into 4 to 6 large, round balls. Place the hamburger balls onto a broiler pan, evenly spaced. Press down on each ball, either with your palm or with a spatula, until a perfectly round patty is formed. Broil for 8 minutes, turn each patty over, and broil for 8 minutes more. (Note: The outside of each patty should appear almost burnt.) Turn off heat and place cheese slices on each patty. When cheese is melted, remove from oven and serve on onion rolls.
