To Die For Christmas Treats

Have you ever had a dessert that you absolutely fell in love with? One that you dream of at night and placed on your list of foods to be included in your last meal on earth?

That’s how I feel about the Chocolate Peppermint Cheesecake I was served at a friend’s house last Christmas. The decadent dessert is to die for. Honestly, I would contemplate swimming in shark-invested waters if it meant that I would be rewarded with a slice of this incredibly rich cheesecake.

I included the recipe below in case you want to impress your friends at your next holiday party. In addition, I also added the recipe for my mom’s favorite Christmas dessert—-Chocolate Cherry Cookies.

CHOCOLATE PEPPERMINT CHEESECAKE

Ingredients for the Crust:

14 ounces crushed Oreo cookies

4 ounces butter

Ingredients for Filling:

3 eight-ounce packages of cream cheese

1 1/2 cup sugar

6 eggs

1 tablespoon peppermint extract

1/2 cup white chocolate, melted

Directions:

Preheat oven to 350 degrees.

Combine crust ingredients and press into a 9-inch springform pan.

Beat together cream cheese with sugar, and then add eggs, one at a time.

Add peppermint extract and melted chocolate. Mix well. Pour into springform pan.

Place cheesecake into a water bath and bake for 1 hour.
Remove and allow to cool completely.

Unmold, slice and serve.

CHOCOLATE CHERRY COOKIES

Ingredients:

2 cups butter, softened

2 1/2 cups plus 1 tablespoon granulated sugar

1 teaspoon salt

2 eggs

2 teaspoons vanilla

4 1/2 cup all-purpose flour

3 teaspoons baking powder

1 cup chopped cherries

1 cup chopped walnuts

4 ounces melted chocolate

Directions:

Cream butter, sugar and salt. Add eggs, mix until well incorporated. Add vanilla. Add flour and baking powder that have been mixed together. Add cherries and walnuts. Mix well.

Roll into 1 1/2-inch logs. Chill.

Preheat oven to 350 degrees.

Slice cookies 1/4-inch thick and place on cookie sheet.

Bake for 10-12 minutes.

Remove from oven and allow to cool before dipping each cookie into melted chocolate.
