I had a friend once who was – for the most part – a vegetarian. We used to lunch together quite often and she explained it was not necessarily by choice, but if she ate meat too much, it made her physically ill. She had me try fried tofu once and it was…like eating nothing. But I think that was because it was simply fried tofu. When I dipped it in a bit of soy sauce, it wasn’t so bad.

Baked Tofu Bites
For this recipe, you will need one 16-ounce package of extra firm tofu, soy sauce, maple syrup, ketchup, vinegar, hot sauce, sesame seeds, garlic powder, black pepper, and liquid smoke flavoring.
Preheat your oven to 375 degrees. Spray a cookie sheet with non-stick spray. Slice the tofu in 1/2 inch slices, but as you slice, gently press the water from each slice. Cut the slices into 1/2 inch cubes.
In a bowl, combine 1/4 cup of soy sauce, 2 tablespoons of maple syrup, 2 tablespoons of ketchup, 1 tablespoon of vinegar, and a dash of hot sauce. Stir well then add 1 tablespoon of sesame seeds, 1/4 teaspoon of garlic powder, 1/4 teaspoon of black pepper, and a teaspoon of liquid smoke flavoring. Stir the tofu cubes in gently then let this set for at least 5 minutes.
Place the tofu cubes on the cookie sheet and cook in the oven for 15 minutes then turn the cubes. Bake another 15 minutes or until brown.
Garlic Ginger Tofu
For this recipe, you will need two pounds of firm tofu, canola oil, minced garlic, minced fresh ginger root, one lime, and tamari.
Heat 3 tablespoons of canola oil in a wok over medium heat. Add 2 teaspoons of garlic and 2 teaspoons of minced fresh ginger root. Cook for one minute, and then add the tofu with 1 tablespoon of tamari. Stir to coat then cover and cook for 20 to 30 minutes. Squeeze limejuice over the tofu before serving.
