Ingredients:
- 4 cups tomatoes (8 – 10 fresh tomatoes), peeled, cored, chopped; or 4 cups canned whole tomatoes, crushed
- 12 fresh Basil leaves, washed
- 1 cup heavy cream
- 1/4 pound butter
- Salt to taste
- 1/4 tsp freshly ground black pepper
Directions:
- Combine tomatoes and juice in saucepan. Simmer for 30 minutes.
- Allow tomatoes and juice to cool, then puree liquid mixture with basil leaves in blender. (You will want to puree in small amounts or risk getting tomato juice all over your counter.)
- Return pureed mixture to saucepan. Add cream and butter, while stirring over low heat.
- Garnish with basil leaves and serve with cheese and croƻtons (or crackers) on top.
