Traditional Mishmash
1 onion, sliced
24-ounce jar roasted pepper strips, sliced
3 eggs
1 1/2 cups feta cheese
2 large tomatoes, chopped
Preheat oven to 325 degrees. In a medium pan, fry the onion and the pepper strips. In a small bowl, beat the eggs. Press the cheese with a fork and add the eggs. Add to frying pan and fry until cheese mixture is melted in with onion and peppers. Garnish with parsley.
