Some regard the mango as the taste of summer. I have to admit that mangos are not my favorite fruit. I love to bite into them but the aftertaste is not enjoyable to me. Perhaps I’m an odd duck, remember I also do not like mint or sweet potatoes. However, I know many love mango and I received a few emails with interesting mango recipes. Mango is a sweet and healthy fruit providing a high dose of vitamin A which is known to aid in eye health. If you don’t want to eat them you can put them on your face to unclog pores! Don’t worry, even eating them helps your skin. It is also said that mangos can lower cholesterol and prevent colon, breast, and prostate cancer. That sounds like plenty of reasons to give them a try or if you are like me to keep trying them in different recipes to find one you like.
Mango and Strawberry Salsa
Ingredients
2 tablespoons balsamic vinegar
2/3 cup orange juice
1/4 cup lemon juice
2 tablespoons lime juice
2 diced fresh mango
2 pints strawberries, diced
Directions
1.Stir together the balsamic vinegar, orange juice, lemon juice, and lime juice in a large bowl. Gently fold in the mango and strawberries until blended. Allow the mixture to rest at least 20 minutes before serving
Mango Avocado Salsa
Ingredients
1 mango – peeled, seeded and diced
1 avocado – peeled, pitted, and diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 teaspoon salt
2 tablespoons fresh lime juice
1/4 cup chopped red onion
3 tablespoons olive oil
Directions
1.In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. To blend the flavors, refrigerate for about 30 minutes before serving.
