Turnip the Volume

What do you do when you only have a handful of small white turnips? Try this simple solution!

We’ve recently joined a CSA (Community Sponsored Agriculture) group. Well, actually, the shares were already taken for the year, but friends of ours were willing to split their share for our benefit.

For a couple of weeks straight, we have gotten just a few small white turnips, and I had been saving them thinking that some inspiration would come to me. After all, what can you do with one or two tiny turnips, right? Still, I didn’t want to put them to waste.

The solution came with the second batch of turnips. Along side of them were just a few early carrots. Carrots are easy to use up, since they can always be eaten out of hand for a snack. Instead, we combined those turnips and carrots together to make a yummy mash that even our youngest child enjoyed.

First we peeled and washed both turnips and carrots and then put them on to boil. When they were cooked, my husband mashed them with a bit of milk, butter and salt. He got just the right combination. The carrots added a nice sweetness to the turnips without being overpowering.

The one thing I would warn you about this simple side dish is that carrots contain a lot of water, so be sure to drain them well before mashing, or the result may be a little soupy.

The only problem with this adventure in turnips is that we would have liked to have some more of them. The dish did not go far with what we had for a family or five.

As for the amount of milk, butter and salt to add, this is one of those so simple ideas that you can pretty much add the ingredients by eye, according to how many turnips and carrots you have. You can start with whatever you might use for mashed potatoes, keeping in mind volume. In our care, we had slightly more turnips than carrots, and this worked out well.
