With a handful of simple ingredients, you can create quick and easy chicken marinades for spring baking or summer grilling. You can even prepare these weeks ahead. Just throw the chicken and the marinade into a bag or freezer dish together and then freeze. Pull them out of the freezer the night before to thaw in the refrigerator, or defrost in the microwave before cooking.
Soy Good Chicken
This one I am afraid that I eyeball, so I don’t know exact measurements for you, but I think that makes it even easier. You just want to make sure that you have a nice even coating on the chicken, so what could be simpler?
Basically, you want to lay out your chicken in a single layer (I like boneless, skinless, chicken tenders but you can use chicken breast haves in a baking dish. A 9 x 13 glass dish usually does the trick. Next, take some dijon mustard and spread a light coating over the top of each piece. After the mustard, sprinkle some shredded parmesan cheese on top, about 1/4 cup for a full dish of chicken. Top this with a couple of glugs of good quality soy sauce. Bake in the oven at 350 for about 40 minutes or until done.
Honey is the Chicken Done?
This marinade yields a yummy smell when cooking, prompting us all to ask when on earth is that chicken going to be done on the grill.
1/4 olive oil
1/4 honey
1 tsp dried sage
1 tbsp lemon juice
1 tsp salt
1/4 tsp black pepper
Mix the marinade and then add it to the chicken. Allow the chicken to marinate for at least two hours before grilling. Discard any leftover marinade. If you want a stronger flavor, you could make a second marinade and turn it into a glaze. Leave out the lemon juice and add 2 tbsp of melted butter.
