Two Great Snacks for Diabetics

One thing I really like to do is snack. As I get older, I realize I need to be more cautious in my snacking. Whereas I could once wolf down a bag of Doritos and a can of French onion dip, I can no longer do that. I set out on a quest for healthier snacks. Oh, I know what you are thinking, “have a carrot stick”. But, I wanted something that was still tasty, just not quite as bad for me. Here is couple of recipes that I think fit that bill!

Baked Onion Rings

For this recipe, you will need four large onions, fine dry breadcrumbs (whole wheat makes it even all the better!), poultry seasoning, and an egg.

Slice the onions to desired thickness. I like to slice mine about ¼ an inch thick. Separate the onions into rings. Soak the rings in cold water with a little salt for about 30 minutes. Drain onions on a paper towel after soaking. If you are avoiding salt, you can skip this step.

In a small bowl, mix 1 1/2 cup of breadcrumbs with 1/2 teaspoon of poultry seasoning. In another bowl, mix one egg with 1 tablespoon of cold water. Preheat your oven to 400 degrees. Dip each onion ring in the breadcrumbs, then the egg mixture, then the breadcrumbs again. Place on a greased baking dish. Continue until all are breaded then cover the baking dish with aluminum foil. Bake for 10 minutes then remove foil and bake another 20 minutes until crisp.

Popcorn Drops

If you are in the mood for something sweet, try these popcorn drops. You will need 2 cups of unsalted popcorn (already popped), eggs, baking powder, cream of tartar and a sugar substitute.

Preheat your oven to 350 degrees. Place two cups of popped popcorn into a food processor and process it until it is in kernel size pieces. Beat three egg whites until they are frothy. Add 1/2 teaspoon of baking powder, 1/4 teaspoon of salt, and 1/4 teaspoon of cream of tartar. Beat until stiff then add 2 tablespoons of sugar substitute and mix until blended. Fold the popcorn pieces into the beaten egg mixture. Drop teaspoons of the mixture onto a greased cookie sheet. Bake for 12 – 14 minutes until they turn slightly brown.
