Two Healthy Muffin Recipes

Here are two incredible muffin recipes. The best part is – they are good for you!

Apple Muffins

For this recipe, you will need all-purpose flour, baking powder, sugar substitute (the kind for recipes), ground cinnamon, ground nutmeg, skim milk, reduced-calorie margarine, and one medium apple.

Preheat your oven to 400 degrees. Mince up enough of your apple to make 1 cup. In a medium sized bowl, combine 1 2/3 cup of all-purpose flour, 2 1/2 teaspoons of baking powder, 1/2 teaspoon of salt, 1 tablespoon of sugar substitute, 1 teaspoon of ground ginger, and 1/4 teaspoon of ground nutmeg. In a separate bowl, lightly beat one egg, then add 2/3 cup of skim milk, 1/4 cup of melted reduced calorie margarine. Add that mixture to the dry ingredients and stir until moist. Fold in your minced apple. Spoon the batter into a coated muffin pan, filling each up about 2/3s of the way full. Cook for 25 minutes.

Heart Healthy Oat Muffins

These muffins are not only tasty, but may help you lower your cholesterol. You will need oat bran, brown sugar, baking powder, nutmeg, skim milk, eggs, honey, vegetable oil, and vanilla extract.

Preheat your oven to 425 degrees. Combine 2 cups of oat bran, 1/4 cup of brown sugar, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1 tablespoon of nutmeg. In a separate bowl, lightly beaten egg whites, then add 1/2 cup of skim milk, 1/4 cup of honey, and 2 tablespoons of vegetable oil. Then stir in 1/2 teaspoon of vanilla. Spoon the batter into a coated muffin pan, filling each up about 2/3s of the way full. Bake for 15-20 minutes. If you want a fruity flavor to your muffins, add 1/2 cups of raisins, blueberries, raspberries, or minced apple (with 1 teaspoon of cinnamon added).
