Two Low Calorie Frosting Recipes

There are plenty of recipes for low calorie or low fat cake. I have posted several on this site. It is so nice to have your cake and eat it too. However, I always felt like it was all for nothing once I add the frosting. My solution was to add a sprinkling of powdered sugar or put a dollop of fat free whipped topping on a slice. Those alternatives work especially well if you add fresh fruit to your cake. Yet, a birthday cake is not the same without frosting. I know many decide to indulge on special occasions like birthdays and holidays but that is not always the best choice. Limiting your sugar and fat intake should be a lifestyle change and not a temporary solution to fitting into your little black dress to wear to your twenty year reunion. While I do not have a strong sweet tooth, many dieters do and need a solution that does not feel like a replacement or throw their dieting off track for the next month. So, I want to introduce you to two frosting recipes that do not compromise on taste or calories. Take heed, the first recipe calls for Splenda and the second for a sugar free product. So, if you have an aversion to fake sugars than replace with real sugar. Yes, this will add in calories. Simply adjust how much frosting you use and the size of your slice of cake.

Low Fat Cream Cheese Frosting

Ingredients

1 (8oz) package Fat Free cream cheese

1 (8oz) tub Cool Whip Free Whipped Topping

1/2 cup Splenda

1/2 tsp vanilla extract

Directions

In a medium mixing bowl, beat cream cheese until soft. Add Cool Whip, Splenda, and vanilla extract. Mix until smooth. Makes 12 servings.

Low Calorie “Frosting”

Ingredients

8 oz skim milk

1/4 cup icing (powdered) sugar

1 pkg fat free/sugar free vanilla pudding mix
flavoring

8 oz sugar free Cool Whip

Directions

Mix first four ingredients, fold in Cool Whip and refrigerate until ready to use.

Number of Servings: 12
