Two Quick Tips and an Apology

I owe everyone here on the food blog a huge apology. Not long after I started on the food blog, I posted my recipe for Middle Eastern Chicken Aussie Style. This weekend as I went to make it, when we were having guests for dinner, I found out there is a critical ingredient missing in the recipe I gave you. Fortunately I noticed that as I went to make it rather than afterwards

Rather than hunt through all the myriad and books and files in which recipes are written I thought I’d just take it off my blog. That’s when I noticed the mistake. I thought at first I was just reading too quickly, as I was trying to get it made in a hurry and running out of time. But no, the dried apricots were missing from my original recipe and they are what gives the dish a lot of its taste.

So if you tried it and it didn’t appeal, let me suggest you go back and try it again. I have corrected the original recipe and added the missing ingredient. Trust me, the apricots make all the difference and add that necessary tang to the taste.

It’s easy done though when you’re hurrying to forget an ingredient or use the wrong ingredient, as a friend once did. She wanted to make a cake to impress guests that were coming and again, in a hurry, she grabbed the packet without looking too closely at it, thinking it was the sugar. It turns out it was salt. Needless to say the cake was a disaster and she felt embarrassed.

Another friend thought the stew she was making to impress her future mother-in-law needed thickening. So she reached for a little bit of gravy mix. Only problem was it was cocoa. Needless to say it was a very unusual tasting stew and impressed her future mother-in- law all right, but not the way she’d hoped.

See the common ingredient in all these stories? Rushing and getting flustered. So if you’re cooking for guests can I suggest two things? Keep your menu simple and make sure you allow enough preparation time without rushing.
