Two Speedy Ground Beef Suppers for Busy Weekday Nights

That’s right folks. Just around the corner are those ominous three words: back to school. The lazy days of summer are pretty much gone and with that means that week night dinners need to be quick and easy. Here are two ground beef recipes that will be quick to prepare, quick to serve and will have your kids asking for more. (Which in my book is always the sign of a perfect meal.)

Nacho Cheesy Crock Pot Sloppy Joes

Combine this easy weeknight supper with a salad and some baked potatoes. Since it goes in the crock pot, it’s a great dinner for nights where you come home late from activities. It will also freeze well so you can go ahead and make the large batch and then freeze some for next week.

You Will Need:

3 pounds of lean ground beef

1 cup of chopped onion

2 cans of condensed fiesta cheese soup

¾ cup ketchup

18 hamburger buns

Cook the ground beef and onion until the meat is browned and the onion is tender. Drain off the fat.

Combined cooked meat and onions with cans of soup and ketchup in your slow cooker. Cook on low for 4 hours or on high for 2 hours.

Cheesy Beef Pasta

This is another one of what I call the do it yourself hamburger helpers. This is a speedy skillet supper that comes together easily in about half an hour.

You will need:

1 cup of tube pasta

½ pound of ground beef

1 can of diced tomatoes (14.5 oz)

½ cup chopped scallions

2 tbsp of cream cheese

¼ cup each of shredded Swiss, cheddar and Parmesan cheese

Cook pasta according to package directions. Meanwhile, brown the beef until no longer pink. Drain the fat. In the same skillet stir in the tomatoes. Bring the mixture to a boil and then reduce heat and simmer for about 3 minutes. Stir in the onions and cream cheese until the cream cheese is melted. Drain the pasta and add it to the meat mixture. Add the cheese and stir them in so they melt.
