Valentine Breakfast in Bed

valentine Breakfast in bed is a small luxury that can make a big impact for your valentine. Start the day off right with a celebratory breakfast. Here are are a couple of ideas. One is sweet and the other is savory Choose the one that works best for you and your love. Whipped cream is optional.

Chocolate Waffles

Ingredients:

1 1/2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

1/2 cup granulated sugar

3 tablespoons unsweetened cocoa powder

1 cup milk

2 eggs

4 tablespoons butter, melted

 

Directions:

In a large mixing bowl, stir together the dry ingredients: flour, baking powder, salt, sugar and cocoa.

In a medium mixing bowl, stir together the wet ingredients: milk, eggs and butter until the mixture is smooth.

Combine the wet ingredients into the dry ingredients and mix just until moistened.

Meanwhile, preheat the waffle iron while the waffle batter rests.

Spray the preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. You can serve this with a sprinkle of confectioner’s sugar, if you like and maybe some cut strawberries.

Eggs Benedict

Ingredients:

4 egg yolks

3 1/2 tablespoons lemon juice

1/8 teaspoon Worcestershire sauce

1 pinch ground white pepper

1 tablespoon water

1 cup butter, melted

1/4 teaspoon salt

8 eggs

1 teaspoon distilled white vinegar

8 strips Canadian-style bacon

4 English muffins, split

2 tablespoons butter, softened

You’ll need to cook the eggs, toast the English muffins and make the Hollandaise sauce.

Directions:

To Make Hollandaise: Fill the bottom of a double boiler part-way with water without letting the water touch the top pan. Bring the water to a gentle simmer. In the top of the double boiler, whisk together the egg yolks, the lemon juice, the white pepper, the Worcestershire sauce, and 1 tablespoon water.

Add the melted butter to the egg yolk mixture 1 tablespoons at a time, while whisking yolks constantly. If the sauce begins to get too thick, add a teaspoon or two of hot water.

Continue whisking until all of the butter is incorporated. Whisk in the salt, then quickly remove the sauce from the heat. You want to keep the sauce warm however. You can do this by placing a lid on the pan.

Next, preheat your oven or toaster oven on the broiler setting. Poach the eggs, adding vinegar to the water before poaching. The yolks should still be soft in center.

While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler or a toaster oven.

Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place two on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives if desired.

This dish is best served immediately.
