Valentine’s Day Breakfast in Bed

Valentine’s Day is this Saturday. Since the holiday falls on a weekend, why not start off the day sharing a romantic breakfast in bed with your sweetie. Or, if you have kids, consider making makeshift beds out of pillows and comforters in the living room and dine on these delicious Valentine’s Day-inspired recipes the entire family is sure to love:

STUFFED CHOCOLATE STRAWBERRY FRENCH TOAST

Ingredients:

2 tablespoons butter

3 eggs

1 tablespoon sugar

1 teaspoon ground cinnamon

1/4 milk

Strawberries, sliced (you determine the amount)

Semi sweet chocolate chips (you determine the amount)

Cream cheese, softened

Powdered sugar

Directions:

Melt butter in pan on stove.

Whip eggs, sugar, cinnamon and milk together in a mixing bowl.

Spread softened cream cheese on one side of one piece of bread.

Spread cut up strawberries on top of cream cheese. Add chocolate chips on top of strawberries. Place plain piece of bread on top.

Hold together and dip each side into mixing bowl batter (do not drop in).

Place on hot pan for about 3 minutes on each side.

When finished, put on plate and top with sliced strawberries and powdered sugar.

FRUIT SALAD WITH BALSAMIC VINEGAR

Ingredients:

1 pint strawberries, hulled and halved

1 pint blueberries

1 pint blackberries

1 pint raspberries

1 tablespoon balsamic vinegar

1/4 cup sugar

Fresh mint, for garnish

Directions:

Place 4 to 6 dessert glasses in the refrigerator.

In a large bowl, combine the berries, balsamic vinegar and sugar.

Stir gently.

Cover securely with plastic wrap and refrigerate for 1 hour.

Spoon the berries in chilled glasses.

WHITE HOT CHOCOLATE

Ingredients:

1 cup white chocolate chips

1 cup heavy cream

4 cups half-and-half

1 teaspoon vanilla extract

1/4 teaspoon peppermint extract

Whipped Cream for garnish

Candy cane, crushed or whole, for garnish

Directions:

In a medium saucepan over medium heat, combine white chocolate chips and heavy cream.

Stir continuously until white chocolate chips have completely melted.

Stir in the half-and-half, vanilla extract and peppermint extract.

Stir occasionally until heated through.

Pour into mugs and top with a dollop of whipped cream and a candy cane.
