One of my favorite activities with my girls is baking. They love to help measure and mix. I love the giggles and eating the yummy treats together when it is over. Not so fond of the mess but we get through it together. Kitchen memories are the warmest memories.
Recently, I came across an idea on Pinterest; waffle cookies. Have you heard of it? Probably you have, I am not up to date on the latest baking trends. We had our oven break quite some time ago and it still isn’t fixed. So, there hasn’t been much baking in the kitchen. That is the reason a waffle cookie recipe caught my eye. I remember my grandmother making pizelles, which are cookies made in what looks just like a waffle maker. So, the concept was tried and true. I was also informed that you can use any cookie recipe in a waffle maker. Just be careful of how long you leave it in as it will bake quickly. I have a mini waffle maker so the cookies are quite cute. My younger daughter mixes the batter with me and gets to pour a few in the waffle maker while my older daughter keeps an eye on the progress. It is so much fun!
Chocolate Chip Waffle Cookies Recipe
Ingredients
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1/2 cup butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup miniature semisweet chocolate chips
Directions
- In a large bowl, combine the sugars, butter, egg and vanilla. Combine the flour, salt and baking soda; gradually add to sugar mixture. Stir in the coconut, cashews and chocolate chips.
- Drop batter by tablespoonfuls 1 in. apart onto a preheated waffle iron coated with cooking spray. Bake for 1-2 minutes or until golden brown. Carefully remove to wire racks; cool completely. Yield: 3 dozen.
You can add a dusting of powdered sugar.
