Watermelon Feta Salad

While summer is still hanging on, it is time to take advantage of one last summer treat; watermelon. Watermelon is so refreshing and sweet it is hard to imagine that it is so good for you. But since it is, why not take advantage of this low fat treat one last time before summer closes its doors until next year.

I love that this recipe incorporates two of my favorites; watermelon and feta. I never would have thought of combining the two but it works. I have to admit that I do not care for mint so I omit it. However, I do know that many love mint and find this addition refreshing and yummy. I will never understand that. I taste mint and I think of toothpaste. I can’t imagine adding toothpaste to flavor anything, but that’s me. Apparently I am in the minority when it comes for my dislike of mint. So for the rest of you, keep the mint. I add very little black pepper if any at all. My kids do not like black pepper and found it to be too harsh when added.

Watermelon and Feta Salad

6 cups of watermelon

1/2 cup of finely chopped fresh mint

5 ounces to 6 ounces of feta cheese

Fresh ground black pepper to taste

Fresh lime juice

Serves 6.

1. Chop watermelon into cubes, approximately 1-in. squares.

2. Place in a large mixing bowl and squeeze in the juice from half of a lime. Add fresh ground black pepper to taste.

3. Rinse mint sprigs, remove the leaves from the stem and finely chop the leaves.

4. Toss the mint, lime juice and pepper with the watermelon.

5. Transfer from the mixing bowl to a serving platter where the watermelon can spread out a little.

6. Crumble feta over the melon evenly and serve.
