Ways to Spice Up Your Super Bowl Party

Despite the fact that the Green Bay Packers blew their chance to square off against the New England Patriots in Indianapolis next Sunday, I still scored an invitation to a Super Bowl party that I know will make for a winning evening.

If you are planning to host your own pigskin party, expect the unexpected. The entire state of Wisconsin had booked hotel reservations in Indiana long before the Giants dashed the Packers’ dreams of returning to the Super Bowl for a second consecutive year. You just never know which team will play to win come Sunday.

As such, it’s up to you to ensure that your party guests have a super time even if the game’s a blowout. Personally, I don’t rely on individual teams for game day excitement; rather, I place my money on the menu. The following dish is sure to spice up your Super Bowl party regardless of what transpires on the field:

Spicy Italian Sausage Soup

Ingredients:

4 hot Italian sausages, casings removed

2 tablespoons olive oil

1 medium yellow onion, diced

4 stalks celery, diced

1 cup diced carrot

Salt and pepper

4 cloves garlic, minced

2 cups diced zucchini

1 tablespoon dried basil

1 teaspoon dried oregano

1 jar (28-ounce) marinara sauce

1 can (14 ounces) diced tomatoes, undrained

3 cups chicken stock

1/4 cup dry white wine

1/4 cup grated Parmesan cheese

2 cups Rotini pasta, cooked al dente

Shredded Parmesan cheese

Directions:

Add sausage to large pan and cook until no longer pink.

Add oil, onion, and celery, and cook 3 to 4 minutes.

Season with a little salt and pepper.

Add zucchini and cook another couple minutes.

Add garlic and cook 30 seconds.

Add basil, oregano, marinara sauce, tomatoes, chicken stock and wine.

Bring to a boil, stirring occasionally.

Turn down heat and stir in grated Parmesan cheese and pasta.

Serve in bowls and top with more Parmesan cheese before serving.
