What Can You Do With a Cake Mix? Part One

Cake mixes aren’t just for baking cakes. No siree, they can be used to make a variety of mouth watering dishes that will leave your guests wondering how on earth you found the time to be so…domestically goddess inclined.

Here are a few recipes to get you started:

These first two recipes come from my sister. She learned to cook before I did, and she happily taught me the basics of good taste and delicious food. Thanks, Bethy!

Apple Bake:

To make this recipe, combine 1 package of yellow cake mix, 3 eggs, and a can of apple pie filling. Mix well and pour into a greased 2 qt. dish or a 13×9 pan and bake at 350 degrees until set, approximately 45-55 minutes. Let cool before serving. Cut into squares to plate. Serve topped with whipped cream and some toasted walnuts for additional flavor and presentation.

Chocolate Cherry Bake:

To make this recipe, simply combine 1 package of chocolate cake mix, 3 eggs, and a can of cherry pie filling. Mix well and pour into a greased 2 qt. dish or a 13×9 pan and bake at 350 degrees until set, approximately 45-55 minutes. Let cool some before serving. Cut into squares to plate. Serve topped with whipped cream for additional flavor and presentation.

This next recipe comes from my Aunt. She once told me the recipe while I stood in her kitchen. She probably didn’t know I memorized it so I could make it again and again. Thanks, Vicki.

Super Easy Peach Dessert

For this recipe you’ll need:

1 yellow cake mix

1 can (29 ounces) peaches (you’ll use the juice)

1 stick melted butter or margarine

To make this recipe:

Spray a 2 qt. dish or 13×9 inch pan with cooking spray. In a bowl, combine the cake mix, peaches with juice, and melted butter and stir until combined. Pour into dish and bake at 350 degrees for 55 minutes. Serve with a dollop of whipped cream and a few raspberries (add a sprig of mint for fancy entertaining) for a delightful dessert.
