You know that I love cooking with chicken. It is a relatively inexpensive protein source, it is lean, and it is versatile. This week, however, I think we have hit a big wall, a chicken wall so to speak. (Boy, I bet that conjures up all sorts of funny imagery, huh?)
Anyway, it started out innocently enough. Our local grocery store was offering whole name brand fat chicken roasters for $.79 a pound. Around here, that is a very good thing. I like the roasters because after cooking them, I can also make homemade gravy, chicken stock and have plenty of leftovers for other dishes. I purchased four of them and placed two of them in the refrigerator.
I roasted one chicken at the beginning of the week, but by the end of the week, no one was looking forward to me cooking the second one. I prepared it anyway, placing it in our large crockpot before we left for church. Worse comes to worse, I thought, I could cut the meat off of it and freeze it for another day.
Instead, I came up with a new idea. We were passing this famous (to our town) barbecue place, and my husband was reminiscing longingly about it. The food there is great, but it will also cost you quite a bit. We got take out there one day to thank our brother in law for helping with our swing set, and the cost was more than $50!
Ah ha. We could make our own barbecue. We stopped by the grocery store, and picked up torpedo rolls and my husband’s favorite sauce. The chicken got shredded, the sauce added, and we had an instant new dinner. I added some cheese to mine as well as the onions from the crockpot. It was delicious, easy and no one complained that it was chicken again.
