Who Needs Take-out? Make Your Own!

Who doesn’t love breakfast sandwiches from a fast-food drive-thru?

Last night after the football game, my family and I were contemplating what to have for dinner. We had planned on grilled salmon with white rice and broccoli. However, after snacking on artichoke dip and cheese dip with tortilla chips, our appetites just weren’t up for a complete meal.

As an alternative to the normal weeknight or even weekend dinner, we opted for breakfast instead. Our solution last night was to serve egg muffins. Enjoy this easy recipe for a yummy weekday breakfast or a quick and simple evening meal. My husband and children love these. And the best part? You don’t even need to hop in your car to get them.

For This Recipe You Will Need The Following Ingredients: (Ingredients listed are per muffin. If you’re making four muffins, you’ll need to multiply the ingredients by four.)

1 English Muffin

1 Slice of American cheese

1 Egg

1 tsp Butter

Cooking Spray

1 Slice Bacon

To Prepare This Recipe:

Cook bacon in a pan or in the microwave to desired crispness. Drain the fat by placing the bacon on a paper towel and let it rest until you’re ready to serve.

Toast English muffin in the toaster to desired crispiness.

Meanwhile, in a bowl, beat one egg. Place cooking spray in a small saucepan and add the beaten egg. Let the egg start to set, just like you would do with an omelet. Cook until mostly done on one side, then flip the egg over and let it finish cooking.

Once the muffin is toasted, spread with butter.

To serve, top the bottom half of the muffin with the cooked egg. Place the cheese on top of that, followed by the cooked bacon. Top with the other half of the toasted muffin and serve as a sandwich.

Tips:

In a hurry? Skip the bacon or use the new already-cooked kind from the store. Or, substitute bacon for cooked deli ham.

Instead of cooking the egg in a pan, spray a regular soup bowl with cooking spray, then add the egg and beat. Microwave the egg for 1 minute (no longer), and then place on the muffin. This will save you time and dishes and is just as good as the pan-cooked egg.

For a fun alternative to this breakfast, replace the english muffin with a tortilla. Add shredded cheddar cheese as opposed to the american cheese slice and increase the eggs to two. This will result in a delicious breakfast burrito that everyone will love.
