Yogurt Biscuits

Biscuits are a common item on my breakfast table. It is also a family favorite and everyone eats more than their share. Since high fat, high carbohydrate and high calorie biscuits are not good for anyone I have sought to find a new recipe. I needed one that would not disrupt the taste buds of my harshest critics; the kids and my husband. In my efforts I came across a recipe from Weight Watchers. Weight Watchers is one diet plan which does not scrimp on taste. So, my breakfast table now serves Yogurt Biscuits which are 2 points per biscuit.

Yogurt Biscuits

2 cups flour

1/4 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup plain low fat yogurt

Directions:

*In a bowl, mix 1 cup flour, 1 cup yogurt

* Sprinkle sugar over mixture, cover with a damp cloth or loose plastic wrap and leave at least 4 hours or if able, overnight

*Pre-heat oven to 425 degrees

* Add remaining ingredients and mix thoroughly

* Spray a baking sheet with non-stick spray

* Turn out dough on a lightly floured surface and spread evenly with fingers or knife or spoon into a 8×6 inch rectangle

* Cut into 16 pieces

* Transfer to baking sheet, leaving 1 inch between biscuits

* Bake at 425 degrees for 10 minutes

* Lower heat to 400 degrees and bake until golden brown

These biscuits are much better for you and taste just as great as the high fat ones. My son was not completely impressed and thought the refrigerator biscuits tasted better. No one else complained and even my son ate too many. Remember the trick is to limit your portions no matter how low in fat or low in points it is!
