Zucchini Squash Stew
1/3 cup olive oil
1 green pepper, chopped
2 teaspoons salt
1/2 teaspoon basil
3 celery stalks, finely chopped
1 clove garlic, minced
1 onion, chopped
1/2 pound ground beef
2 pounds zucchini cut 1/4-inch thick
3 potatoes, thinly sliced
1 tablespoon of tomato paste
Water
Sauté ground beef and then add all ingredients along with 1 1/2 cups of water. Cover pot and cook 30 minutes or until zucchini is tender, taking care not to overcook.
